He had it once on his mission and couldn't get enough after that. We have tried to look for this Salami here in Puerto Rico and have had no luck...until about a week ago. We were actually just taking a friend home and we stopped by this little Econo to pick up some groceries. Matthew eyed the salami and went crazy and even called a buddy from the mission just to tell him he found Salami Induveca. I know this sounds insane, he's completely obsessed with this salami. Well, I got to say it's very good and I can see why he craves it so much.
He then begged me to try to make him some of the different foods he used to eat with this salami. It is mostly eaten during breakfast and I said I would try. One of the meals (or really this is a snack) consists of a tostone with a slice of fried salami on top and then dipped in ketuchup. I wish you could have seen the glee when he took that first bite. He was even anxious to help me cook and he never does that, just so I can get it right. I have to admit it was pretty tasty...but very fattening, like everything good is. I also made him "salami guisado" which is salami cooked in this tomatoe sauce, then poured over yucca and a fried egg on the side (see below). He said if I could make this dish he would marry me again. I took up the challenge and replicated the dish. He said it tasted just like the salami gisado he had in the Dominican Republic. Aren't I a lucky gal? He's just lucky I know a few things about cooking!

know a few things about cooking? Your the best cook I know! It's funny the things they still love from their missions! I saw pics from the baseball game, it looks like you guys had fun! Wish I was there! What are you and Kristen up to?
LOL, that's funny! I feel the same way about things I used to eat in Hawaii that you can't really find anywhere else. You're a great cook! I need to take some lessons from you :)
